Bittermedel

Bittermedel, or bittering agents, are substances that elicit a bitter taste when applied to the tongue. They are used in food, beverages, and medicine to influence flavor, improve acceptability, or stimulate physiological responses such as digestion and appetite. Bittermedel can be plant-derived, animal-derived, or synthetic, and vary widely in chemical composition and potency.

Common plant sources include gentian root, wormwood, calumba root, quassia wood, hops, and certain citrus peels. Extracts from artichoke leaves and other botanicals are also used. In gastronomy, bittermedel are central to aperitifs and bitters, where they provide characteristic dryness and complexity. In medicine, they serve as flavor modifiers in tonics, syrups, and chewable preparations to mask unpleasant tastes.

Regulation and safety: Bittermedel used in foods and medicines are typically governed as flavorings, additives, or excipients by national and international authorities. They must meet safety standards and labeling requirements. Although generally safe at approved levels, some components may cause adverse reactions in sensitive individuals or interact with medications. Certain bitter compounds from plants can be toxic in high doses, underscoring the need for proper use and dosing.
