Ylikypsyminen, often translated as overripening or overmaturity, refers to the stage in the development of fruits and vegetables where they have passed their peak ripeness and begin to degrade. This process is a natural consequence of enzymatic and microbial activity that continues after the plant material has been harvested or detached from its parent plant.

The initial stages of ripening involve desirable changes such as softening of texture, development of sweet flavors, and aroma enhancement. However, as ylikypsyminen progresses, these desirable characteristics start to reverse. Textures can become mushy and undesirable. Sugars may begin to ferment, leading to alcoholic or sour tastes. Furthermore, the structural integrity of the fruit or vegetable weakens, making it more susceptible to bruising and spoilage.

Several factors can influence the rate of ylikypsyminen. Temperature is a significant factor; warmer temperatures generally accelerate the ripening and subsequent degradation processes. The availability of oxygen also plays a role, as does the presence of ethylene gas, a plant hormone that regulates ripening. The initial physiological state of the produce at harvest also contributes to its shelf life and susceptibility to overripening.

While ylikypsyminen is generally considered undesirable for fresh consumption, in some contexts, slightly overripe produce might still be usable for specific purposes, such as in smoothies, sauces, or baked goods where texture is less critical and sweetness is still a positive attribute. However, significant overripening often leads to spoilage and the potential for microbial contamination, rendering the produce unfit for consumption.
