Torsk is the term in Norwegian, Danish, and Swedish for cod, specifically the Atlantic cod (Gadus morhua), a demersal fish of the North Atlantic.

Distribution and habitat: Atlantic cod occupies cold to cool waters of the North Atlantic, from the Barents Sea and Greenland south to Newfoundland and the Gulf of St. Lawrence, with isolated populations in the Baltic Sea. It is a demersal species that favours continental shelves and slopes, moving seasonally with temperature and prey.

Description: Cod have a robust, elongated body, a broad head, and a distinctive chin barbel. Their coloration ranges from brownish to greenish on the back with a pale belly, often with mottled patterns that help camouflage on the seafloor.

Biology: Atlantic cod mature at a few years of age, live up to two decades or more, and spawn in winter to early spring in shallow coastal areas, releasing large numbers of eggs that drift with currents.

Relation to humans: It is one of the most important commercial fish in the North Atlantic and has been heavily fished since the mid-20th century. Management measures such as catch quotas, seasonal closures, and selective gear are used in many regions to maintain stocks.

Culinary and nutrition: Fresh cod has a mild, slightly sweet flavor and a firm, white flesh that holds up to cooking. It is commonly filleted for baking, frying, or poaching. Nutritionally, cod provides high-quality protein and is a source of omega-3 fatty acids, as well as vitamins B12 and D.

Sustainability and other uses: Traditional dried and salted cod products—stockfish and klippfisk—have long been exported; sustainability varies by stock, and consumers are advised to check certifications.
