Tenderizing is the process of improving the texture of food, especially meat, by reducing toughness and making it easier to chew. In cooking, tenderizing aims to break down connective tissue such as collagen and degrade muscle proteins without compromising flavor.

Mechanical tenderizing involves physically altering the meat’s structure. Methods include pounding with a mallet, scoring with a blade, or using tenderizing needles or blades. These techniques can shorten cooking time and improve penetration of marinades, but they can also damage surface texture and increase the risk of cross-contamination if not handled carefully.

Chemical and enzymatic tenderizing relies on marinades or treatments that alter proteins. Acids from vinegar, citrus, or wine can soften tissue, while proteolytic enzymes from ingredients such as papaya (papain), pineapple (bromelain), or figs (ficin) break down proteins. Marinade times vary by cut and desired texture, but overexposure can lead to an overly soft or mushy result and may affect flavor or color.

Aging and heat-based methods also contribute to tenderness. Dry aging and wet aging use natural enzymes over time to improve texture and flavor. Slow cooking methods—braising, stewing, or low-temperature techniques like sous vide—break down collagen, yielding a tender, juicy result in tougher cuts.

Safety and handling are important in tenderizing. Meat should be kept refrigerated during marination, and any marinade that has contacted raw meat should be heated before reuse to avoid bacterial contamination. The choice of method depends on the cut, desired texture, and safety considerations.
