They have been observed to follow schools of mullet in search of easy prey, as well as scrounging for carrion on beaches and along riverbanks.

They are known to be highly vocal, employing a range of clicks, whistles, and grunts to communicate with one another. Within these colonies, sarnasuses form complex social hierarchies, with dominant individuals holding sway over subordinate members.

Sarnasuses are listed as a species of Special Concern by the governing conservation organizations, due to ongoing habitat disruption and degradation. Efforts are underway to protect and restore their coastal habitats, as well as to study and monitor sarnasuse populations.
