rzep is a Polish word that primarily translates to "burdock" in English. Burdock refers to a group of plants belonging to the genus Arctium, known for their hooked flower heads that cling to fur and clothing, hence the common name "burr." These plants are typically biennial, meaning they complete their life cycle over two years. The first year, they produce a rosette of large leaves and a deep taproot, while the second year, they grow a tall flowering stalk, produce flowers, and then go to seed.

The burdock root, particularly from the common burdock (Arctium lappa), has a long history of use in traditional medicine and as a food source in various cultures. In culinary applications, the root is often peeled and cooked, possessing a slightly bitter, earthy flavor. Medicinally, it has been employed for its perceived diuretic, diaphoretic, and detoxifying properties, often found in herbal remedies.
