A popsicle is a frozen dessert consisting of flavored ice, or a flavored ice and cream mixture, formed in a mold with a stick embedded for easy handling. The term is often used generically to refer to similar frozen treats on a stick, though Popsicle is a brand name in many markets.

The treat was invented in 1905 by Frank Epperson, who was 11 years old in California. He left a cup of powdered drink and a wooden stir stick on his porch during freezing temperatures, creating a frozen pop that he called an Epsicle. After years of development and his family’s involvement, the product was marketed as Popsicle in the 1920s, and the company behind it grew to distribute frozen snacks widely.

Manufacture involves pouring flavored liquids into molds, inserting sticks, and freezing. Variants include fruit juice pops, water- or dairy-based cream pops, yogurt pops, and sugar-free or reduced-calorie versions. Some products are sold as twin pops (two bars joined together), push-up pops, or dairy-free/vegan options, reflecting a range of bases and flavors.

Nutritional content varies with size and ingredients, but most fruit-based pops are relatively high in sugar and calories for a small serving. They may also contain allergens such as dairy or soy. Labels often indicate added vitamins or minerals and dietary designations (gluten-free, vegan, etc.).

In many jurisdictions, the term Popsicle is a registered trademark, while in others it is used as a generic term for similar frozen treats on a stick. The product remains a popular summer confection in many parts of the world.
