Mustikkakakku, literally “blueberry cake” in Finnish, is a traditional dessert that centers on blueberries. The term can refer to several related Finnish cakes that feature mustikka as a key ingredient, using either fresh or frozen berries. In Finland, blueberries are common in summer, but mustikkakakku recipes are also prepared with frozen berries year round.

Most recipes begin with a batter of flour, sugar, eggs, and a fat such as butter or oil, with a leavening agent like baking powder. Dairy products such as milk, yogurt, or sour cream are often included to add moisture and tenderness. Blueberries are folded into the batter or sprinkled on top before baking. Optional ingredients include lemon zest or vanilla for aroma. The cake is typically baked at about 175–180°C until the top is golden and a toothpick comes out clean.

There are numerous variations. Some mustikkakakku are light sponge cakes, while others are denser loaf-style cakes. Toppings or inclusions such as a crumb crumble, icing, or a glaze are common, and some recipes use almond flour or oats for texture. The cake pairs well with coffee, dessert sauces, or whipped cream.
