The core of this technique involves immersing the food, typically dried fish, in an alkaline solution, most commonly made from potassium carbonate (potash) and sodium carbonate (soda ash). This solution is often referred to as "lipeä" in Finnish, hence the name of the treatment.

The purpose of lipeäkäsittely is to alter the texture and flavor of the food. When fish is treated with lye, its proteins are broken down, resulting in a gelatinous and somewhat slippery texture.
