Kurpitsalaatikko is a Finnish baked casserole made from pumpkin puree and is commonly served as part of Christmas meals. It is one of the traditional laatikot (casseroles) on the Finnish Christmas table, alongside lanttulaatikko (turnip) and porkkanalaatikko (carrot).

A typical kurpitsalaatikko combines cooked pumpkin puree with partially cooked rice or barley, milk or cream, eggs, and butter. Some versions include a small amount of sugar for a sweeter flavor, while others emphasize a savory balance with salt. Spices such as cinnamon and nutmeg are often used, especially in sweeter variants. The mixture is poured into a greased baking dish, sometimes topped with breadcrumbs, and baked in an oven at about 175–190°C until set and lightly browned, usually 45–60 minutes.
