Hovedfordøyelsen, often translated as "main digestion" or "primary digestion," refers to the critical phase of breaking down food into absorbable nutrients within the digestive system. This process primarily occurs in the stomach and the initial part of the small intestine, the duodenum.

In the stomach, food is mixed with gastric juices, which contain hydrochloric acid and enzymes like pepsin. Hydrochloric acid creates an acidic environment that denatures proteins, making them easier for enzymes to break down. Pepsin then begins the enzymatic digestion of proteins into smaller polypeptides. The churning action of the stomach walls further aids in this mechanical and chemical breakdown, transforming the ingested food into a semi-liquid mixture called chyme.

As chyme moves into the duodenum, it encounters digestive juices from the pancreas and the liver (via the gallbladder). Pancreatic juice contains a potent mix of enzymes, including amylase for carbohydrates, lipase for fats, and proteases (like trypsin) for proteins. Bile, produced by the liver, emulsifies fats, breaking large fat globules into smaller droplets, thereby increasing the surface area for lipase to act upon.

This combined action of stomach acid, enzymes, and bile in the stomach and duodenum constitutes hovedfordøyelsen, preparing the food for further absorption in the lower sections of the small intestine. Without this initial, comprehensive breakdown, the body would be unable to extract the necessary energy and building blocks from food.
