Hnití is the decay or rot of organic matter caused by microorganisms, primarily bacteria and fungi, and, in some cases, detritivores. It involves the breakdown of complex organic compounds into simpler substances, often accompanied by color changes, texture loss, and characteristic odors.

The process is driven by enzymes that break down proteins, carbohydrates, lipids, and, in plant material, lignin. In foods, spoilage is usually caused by mesophilic bacteria and yeasts; in wood and fibrous materials, fungi such as brown rot and white rot play a major role. Putrefaction refers to anaerobic decomposition that produces foul-smelling compounds like sulfur-containing chemicals and amines.

Hnití occurs in a range of environments. In nature, it is a key part of nutrient cycling, returning carbon, nitrogen, and other elements to the ecosystem. In human contexts, it leads to food spoilage, material damage (notably to wood and textiles), and health concerns when pathogens are involved.

Types of rot vary by organism and substrate. Wood rot weakens structures; food spoilage manifests as off odors, textures, and flavors; composting is a controlled form of decomposition managed to recycle organic waste.

Environmental factors influence rate and pathway. Temperature, moisture, oxygen availability, and pH determine which microbes dominate and how quickly hnití progresses. High moisture and warmth typically accelerate decay, while dryness or low temperatures slow it down.

Prevention and management focus on reducing moisture, storing materials properly, sanitizing surfaces, and applying appropriate protective measures to wood and food to extend usability and safety.
