Gujiya is a sweet Indian deep-fried pastry, typically enjoyed during festivals, most notably Holi. It is made of a filling, typically made from grated khoa (a dairy product similar to evaporated milk solids), dried fruits such as raisins and cashews, and sometimes coconut. The dough is made from maida (refined wheat flour) and ghee (clarified butter). The dough is then shaped into a semicircular pocket, filled, and the edges are sealed, often with a decorative crimped pattern. Gujiyas are then deep-fried until golden brown and crispy. After frying, they are usually dipped in sugar syrup or dusted with powdered sugar.
