These regulations specify which colorants are permitted, their maximum usage levels in different food categories, and labeling requirements. For instance, in the European Union, food colorings are identified by E-numbers, such as E100 for curcumin. In the United States, the Food and Drug Administration (FDA) regulates food additives, including colorings, approving them for specific uses and setting standards.

Concerns have been raised regarding the potential health effects of certain food colorings, particularly in sensitive individuals. Some studies have suggested a link between artificial food dyes and hyperactivity in children, leading to voluntary or mandatory warnings on product labels in some jurisdictions. However, the scientific consensus on these links is still debated, and regulatory bodies continuously review the available evidence to ensure the safety of approved food colorings.
