Elintarvikeväreinä, also known as food colorings, are substances added to food to enhance or impart color. They are used to make food appear more visually appealing, to compensate for color loss during processing or storage, or to create a specific color associated with a particular flavor or product.

Food colorings can be derived from natural sources or synthesized chemically. Natural colorants are extracted from plants, animals, or minerals. Examples include carotenes from carrots, anthocyanins from berries, and curcumin from turmeric. These natural dyes are often perceived as healthier or more "natural" by consumers, but their stability and color intensity can be variable.

Synthetic food colorings are manufactured through chemical processes and are often more stable, concentrated, and cost-effective than their natural counterparts. Common synthetic food dyes include tartrazine (yellow 5), sunset yellow FCF (yellow 6), and allura red AC (red 40). The use of synthetic colorings is regulated by food safety authorities worldwide to ensure they are safe for consumption.

Regulations regarding food colorings vary by country and region. These regulations specify which colorants are permitted, their maximum usage levels in different food categories, and labeling requirements. For instance, in the European Union, food colorings are identified by E-numbers, such as E100 for curcumin. In the United States, the Food and Drug Administration (FDA) regulates food additives, including colorings, approving them for specific uses and setting standards.

Concerns have been raised regarding the potential health effects of certain food colorings, particularly in sensitive individuals. Some studies have suggested a link between artificial food dyes and hyperactivity in children, leading to voluntary or mandatory warnings on product labels in some jurisdictions. However, the scientific consensus on these links is still debated, and regulatory bodies continuously review the available evidence to ensure the safety of approved food colorings.
