Dehydrationer refers to a device or system designed to remove water from a substance, yielding a dehydrated product. The term is not widely standardized; in practice, similar equipment is described as a dryer, dehydrator, or desiccation system, depending on method and industry.

Dehydration can occur through several mechanisms. Thermal drying uses heat to evaporate moisture, often with forced air or contact with heated surfaces. Vacuum or low-pressure drying lowers the boiling point of water to enable removing moisture at reduced temperatures, protecting heat-sensitive materials. Desiccant or chemical drying employs hygroscopic substances to bind moisture. Membrane-based dehydration relies on selective permeation to separate water from a mixture, sometimes in combination with pervaporation or dehydration through selective surfaces.

Common implementations include industrial hot-air and drum dryers, spray dryers, belt and tray dryers, vacuum ovens, and freeze dryers (lyophilizers). Laboratory-grade dehydrationers include desiccators with drying agents and small benchtop vacuum ovens. Selection depends on moisture content, sensitivity of the material to heat, required end-point dryness, throughput, and energy considerations.

Applications span food processing (fruit and vegetable drying, snack production), pharmaceuticals and biotech (stabilization of powders, lyophilized products), chemicals and ceramics, and harvested biomass. End-point criteria include target moisture content, water activity, and product integrity. Safety and environmental concerns include heat generation, dust control, and solvent recovery where applicable.
