Beerenauslese, often abbreviated as BA, is a designation for a German and Austrian dessert wine produced from individually selected berries that are overripe, commonly affected by Botrytis cinerea (noble rot). It is a Prädikatswein category, representing a late harvest level that follows Auslese in the German system. Grapes are picked berry by berry, and only those showing extreme ripening and signs of botrytis may qualify, yielding grapes with very high sugar content and pronounced concentration.

Because the berry-by-berry selection is extremely selective, yields are very low. The wines are typically intensely sweet and energetic, with high acidity to provide balance. Fermentation is often slow and may stop before all sugars are converted, resulting in substantial residual sugar. In some cases, botrytized character enhances flavors and aromas.

Riesling is the most common grape for BA in Germany, though other varieties suitable for late harvest winemaking are used in various regions, including Austria. Tasting notes frequently include honey, apricot, dried fruit, marmalade, and citrus zest, with mineral and petrol notes particularly in aged Riesling BA. Ageability is a hallmark; many examples can develop for decades in bottle.

BA wines are typically served as dessert wines, in small glasses, and at cool temperatures. They pair with foie gras, blue cheeses, fruit-based desserts, and nutty pastries. They should be stored in a cool, dark place.
