Aflatoxins are a group of toxic compounds produced by certain molds, primarily Aspergillus flavus and Aspergillus parasiticus. These molds can grow on a variety of food crops, including corn, peanuts, cottonseed, and tree nuts, particularly in warm, humid conditions. Aflatoxins are considered potent carcinogens, and exposure to them has been linked to an increased risk of liver cancer in humans. They can also cause other health problems, such as impaired immune function, developmental issues in children, and acute liver damage (aflatoxicosis) in cases of high exposure.
