Vetclassificatie, or fat classification, refers to the systematic categorization of fats based on their chemical composition, physical properties, and nutritional characteristics. This classification is primarily used in food science, nutrition, and biochemistry to understand the role of fats in health and industry.

Fats can be broadly classified into two main types: saturated and unsaturated fats. Saturated fats contain single bonds between carbon atoms in their fatty acid chains, resulting in a solid form at room temperature. Sources include animal products like butter and meat, as well as tropical oils such as coconut and palm oil. Unsaturated fats, on the other hand, contain one or more double bonds, giving them a liquid form at room temperature. These are further divided into monounsaturated fats (e.g., olive oil) and polyunsaturated fats (e.g., fish oil and flaxseed oil), which contain one or multiple double bonds, respectively.

Another classification system distinguishes between trans fats and cis fats based on the spatial arrangement of hydrogen atoms around the double bonds in unsaturated fatty acids. Trans fats, often found in processed foods, are considered less healthy than cis fats, which are naturally occurring in most plant and animal fats.

In nutrition, fat classification helps guide dietary recommendations. While saturated fats are often limited due to their association with cardiovascular risks, unsaturated fats—particularly omega-3 and omega-6 polyunsaturated fats—are emphasized for their heart-healthy benefits. Food labels and nutritional guidelines frequently rely on these classifications to inform consumers about the types and amounts of fats in their diets. Understanding fat classification aids in making informed dietary choices and developing healthier food products.
