Teiggerüst

Teiggerüst, also known as dough proofing basket or banneton, is a tool used in baking, particularly for bread making. It is typically made of wicker, rattan, or sometimes synthetic materials. The primary function of a teiggerüst is to provide support to the dough during its final rise, known as proofing.

When dough is placed in a teiggerüst, it holds its shape, preventing it from spreading too thinly. The basket's woven surface creates a textured imprint on the dough, which is a distinctive characteristic of many artisan breads. This texture not only adds visual appeal but can also contribute to a crispier crust.

Before use, a teiggerüst is usually well-floured, often with rice flour or a mixture of rice and all-purpose flour, to prevent the dough from sticking. After proofing, the dough is inverted from the teiggerüst onto a baking surface, such as a baking stone or steel, before being baked. The teiggerüst helps to create tension in the dough's surface, which can lead to better oven spring and a more open crumb structure in the finished loaf. They come in various shapes and sizes, commonly round or oval, to accommodate different types of bread.
