Syväjäädyttää, often translated as deep-freeze or flash-freeze, refers to a rapid freezing process. It is distinct from conventional freezing methods, which tend to freeze food more slowly. The primary goal of syväjäädyttää is to freeze the food as quickly as possible. This rapid freezing creates very small ice crystals within the food. The formation of small ice crystals is beneficial because it minimizes damage to the cellular structure of the food. When food freezes slowly, large ice crystals form, which can rupture cell walls.
