Springform

Springform, or springform pan, is a type of bakeware characterized by a removable base and a collapsible side that can be released from the base. The design enables the finished dessert to be unmolded from the ring without flipping, which is especially useful for delicate or freestanding desserts such as cheesecakes, mousse cakes, and tarts with soft fillings.

Construction typically includes a flat circular base, a vertical metal ring around the perimeter, and a latch on the ring that secures it to the base. When the latch is opened, the ring can be lifted away, leaving the cake resting on the base. Most models have a nonstick interior and a seal along the seam to minimize leaks during baking and easy release.

Common uses include cheesecakes, cold-set desserts, and cakes with soft fillings that would otherwise be difficult to unmold. The pan is often used with a water bath to support the filling and prevent cracking, though it's not required for all recipes.

Materials range from steel to aluminum, frequently with nonstick coatings. Sizes vary from small 4 inches to large 12 inches in diameter; the 9-inch size is a standard for many recipes. Availability includes simple two-piece designs and more complex versions with reinforced walls or interchangeable bases.

Care involves hand washing and thorough drying to preserve coatings and prevent rust; avoid harsh abrasives. Check the latch and ring for wear and ensure the base lies flat and the seam is intact before use. The pan may be dishwasher safe for some models, but manufacturers' instructions should be followed.
