Smoothtop

A smoothtop, or smooth-top, is a type of electric cooking surface characterized by a flat glass-ceramic top that covers the heating elements. It is commonly found on electric ranges and other freestanding or built-in stoves. The term is widely used in consumer appliance literature and is sometimes used as a product-line name by manufacturers.

Construction and operation: The smooth top is typically made of ceramic glass. Heating can be provided by radiant elements beneath the glass or by induction coils for induction smoothtops. With radiant systems, heat travels through the glass to cookware, and the surface itself can become very hot. Induction smootopts generate heat directly in compatible pots and pans, allowing the surface to stay relatively cooler while cooking.

Advantages include a flat, easy-to-clean surface without exposed coils or burners, a modern appearance, and generally consistent heat distribution. The absence of raised elements simplifies wiping spills and crumbs.

Limitations and safety considerations: Induction models require ferrous cookware to work properly, while radiant models work with most cookware but can waste heat as the surface glows and may take longer to cool. The glass surface can crack or shatter if heavy objects are dropped on it, and spills that burn can be difficult to remove if allowed to bake onto the surface. Regular cleaning with nonabrasive cleaners is advised.
