Smaksignalerna

Smaksignalerna refers to the nervous signals that carry information about gustation from taste receptor cells to the brain. In sensory science it covers the detection, transduction, and neural processing of taste modalities that help identify nutrients and potential toxins and influence eating behavior.

Taste receptor cells reside in taste buds, primarily on the tongue but also in the soft palate, pharynx, and epiglottis. The conventional five taste categories are sweet, sour, salty, bitter, and umami. Sweet, umami and bitter rely on taste receptors that are GPCRs; salty and sour rely more on ion channels. Detection triggers ATP and other neurotransmitter release to gustatory nerve fibers.

Afferent signals travel via cranial nerves VII, IX, and X to the gustatory nucleus in the brainstem, then to the ventroposterior medial (VPM) nucleus of the thalamus, and onward to the insula and frontal operculum, which house the primary gustatory cortex. Perception of taste is integrated with smell, texture, and temperature to form flavor.

The signals influence feeding, appetite, and learning. They can be modulated by genetics, age, health, and prior experience. Variations in receptor expression alter taste sensitivity; for example, bitter receptor variants change bitter perception. Olfactory input and reward circuits contribute to hedonic judgments of flavors.

In research and industry, Smaksignalerna is studied through psychophysics, electrophysiology, and imaging, and is used in nutritional science and product development to assess flavor profiles and consumer responses.
