Shogaols
Shogaols are a group of pungent phenolic compounds found in the rhizome of ginger (Zingiber officinale). They are dehydration products of gingerols, formed when fresh ginger is dried, heated, or otherwise processed. The most studied member is 6-shogaol; other commonly reported members include 8-shogaol. In fresh ginger, gingerols are more abundant; processing increases shogaol content, contributing to the characteristic pungency of dried ginger and ginger-based spices.
