Shigatoksiinien

Shigatoksiinien refers to a category of toxins produced by Shiga toxin-producing Escherichia (E) coli (STEC). These bacteria are a subset of the E. coli family and are known for their ability to cause severe foodborne illnesses.

The Shiga toxins produced by STEC bacteria are responsible for the symptoms associated with the disease, including bloody diarrhea and potentially life-threatening complications such as hemolytic uremic syndrome (HUS) and thrombotic thrombocytopenic purpura (TTP). The severity of the disease is influenced by factors such as the virulence of the bacteria and the age and health of the individual infected.

Some of the foods that have been linked to outbreaks of STEC infections include undercooked or raw ground beef, raw milk, and produce such as spinach, lettuce, and sprouts. The diagnosis of a STEC infection can be made through a combination of clinical evaluation, laboratory testing, and identification of the bacteria in a stool sample. Treatment for the infection typically involves supportive care, such as hydration and management of symptoms, as there is no specific medication available to treat STEC infections. Prevention of STEC infections can be achieved through proper handling and cooking of foods, as well as practicing good hygiene.
