Röstlokalen is a Swedish term that translates to "roasting place" or "roastery." It commonly refers to a facility where coffee beans are roasted. These establishments can range from small, artisanal operations focusing on single-origin beans and specific roast profiles to larger commercial roasteries that supply cafes and supermarkets. The process of roasting is crucial in developing the flavor and aroma of coffee. Factors such as bean origin, moisture content, temperature, and roasting time all influence the final taste.

In a röstlokal, green coffee beans are heated to high temperatures, causing physical and chemical changes. This process, known as the Maillard reaction and caramelization, creates hundreds of aromatic compounds. Roasters carefully monitor the beans' color and listen for distinct "cracks" – the popping sounds that indicate different stages of the roast. The resulting roasted beans are then cooled rapidly to halt the roasting process.

Many röstlokaler also serve as retail spaces where customers can purchase freshly roasted coffee, often offering a variety of beans from different regions. Some may also have a cafe attached, allowing patrons to taste the coffee brewed from their own roasts.
