Rasvahappesterityypit refer to the classification of fatty acids based on their structural characteristics. The primary distinction is between saturated and unsaturated fatty acids. Saturated fatty acids have no double bonds between carbon atoms in their hydrocarbon chain, meaning each carbon atom is saturated with hydrogen atoms. This results in a straight, linear structure. Examples include stearic acid and palmitic acid, commonly found in animal fats and some plant oils.

Unsaturated fatty acids, in contrast, contain one or more double bonds between carbon atoms in their hydrocarbon chain. The presence of these double bonds introduces kinks or bends in the molecule. Fatty acids with a single double bond are called monounsaturated fatty acids, such as oleic acid, abundant in olive oil. Those with multiple double bonds are known as polyunsaturated fatty acids, like linoleic acid and alpha-linolenic acid, essential fatty acids found in vegetable oils and fish.

A further classification within unsaturated fatty acids relates to the configuration of the double bonds. Fatty acids can exist as cis or trans isomers. In cis fatty acids, the hydrogen atoms on either side of the double bond are on the same side, causing a significant bend in the chain. Most naturally occurring unsaturated fatty acids are in the cis form. Trans fatty acids have the hydrogen atoms on opposite sides of the double bond, resulting in a straighter chain, more akin to saturated fatty acids. These are often formed during industrial hydrogenation processes and have been linked to adverse health effects. This structural variation significantly impacts the physical properties and biological roles of different fatty acid types.
