Pönnukökur

Pönnukökur are Icelandic thin pancakes, similar to French crêpes. They are a traditional and popular treat in Iceland, often enjoyed as a dessert or snack. The batter typically consists of flour, eggs, milk, sugar, and a pinch of salt. Unlike thicker American-style pancakes, pönnukökur are cooked in a special circular pan with shallow indentations, allowing for the creation of multiple thin pancakes at once. This pan, also called a pönnukökupanna, is a common kitchen item in Icelandic households.

The cooking process involves pouring a thin layer of batter into the heated, greased pan and quickly swirling it to create a uniform, thin circle. Once cooked on one side and lightly browned, the pancake is flipped, often with a spatula or by expertly tossing it. Pönnukökur are usually served rolled or folded. Common accompaniments include sugar, whipped cream, jam (particularly rhubarb or bilberry), or even ice cream.
