Päärmäämisessä refers to a traditional Finnish method of preserving food, particularly berries and fruits, by allowing them to undergo a natural fermentation process. This process is typically initiated by airborne yeasts and bacteria present in the environment, and it is distinct from the controlled fermentation used in making alcoholic beverages or cultured dairy products. The key characteristic of päärmäämisessä is the development of a slightly effervescent and often sour taste as sugars are converted into alcohol and carbon dioxide.
