Päällystetystä refers to a traditional Finnish practice of applying a protective layer of fat or oil to the surface of baked goods, particularly rye breads such as *korvapuusti* (Finnish cinnamon rolls) or *pulla* (sweet bread). This technique is commonly used in Finnish baking to enhance moisture retention, improve texture, and extend freshness. The term originates from the Finnish verb *päällystää*, meaning "to cover" or "to coat."

The process involves brushing or spreading a thin layer of melted butter, lard, or vegetable oil over the baked bread while it is still warm. In some cases, a mixture of melted fat and sugar or honey may be used for added flavor. This coating helps prevent the bread from drying out and creates a subtle sheen on the crust. Päällystetystä is particularly associated with rustic Finnish baking traditions, where simplicity and functionality are valued.

While the practice is most strongly linked to rye breads, it can also be applied to other baked goods like pastries or rolls.
