Poffertjesmolen

A poffertjesmolen is a specific type of griddle used in the Netherlands for making poffertjes. Poffertjes are small, fluffy Dutch pancakes traditionally made from buckwheat flour and yeast. The poffertjesmolen is characterized by its numerous small, semi-spherical indentations, which give the poffertjes their distinctive shape.

These gratens are typically made of cast iron, which allows for even heat distribution, essential for cooking the delicate batter quickly and uniformly. The indentations are usually arranged in a grid pattern on the surface of the griddle. To use a poffertjesmolen, the griddle is heated, and then a small amount of batter is poured into each indentation. Once the underside of a poffertje is cooked and small bubbles begin to appear on the surface, they are flipped, often with a fork or skewer, to cook the other side.
