Pasteurointimenetelmät refers to various heat treatment processes used to reduce the number of viable microorganisms in a product, most commonly food and beverages, to extend shelf life and prevent spoilage. The primary goal is to inactivate pathogenic microorganisms while minimizing the impact on the product's sensory qualities and nutritional value. The effectiveness of pasteurization depends on the temperature and duration of the heat exposure.

Several pasteurization methods exist, each tailored to specific products and desired outcomes. The most common is high-temperature short-time (HTST) pasteurization, which typically involves heating the product to at least 72°C (161°F) for 15 seconds. This method is widely used for milk and juices. Another method is low-temperature long-time (LTLT) pasteurization, also known as batch pasteurization, where the product is heated to a lower temperature, around 63°C (145°F), for a longer duration, typically 30 minutes. This is often employed for smaller batches or products sensitive to higher temperatures.

Ultra-high temperature (UHT) processing involves heating the product to a much higher temperature, over 135°C (275°F), for a few seconds. This process can achieve commercial sterility, meaning that virtually all microorganisms are destroyed, allowing for unrefrigerated storage for extended periods. However, UHT can sometimes lead to more significant changes in flavor and color compared to HTST or LTLT. Other methods include flash pasteurization, which uses very high temperatures for extremely short periods, and regenerative pasteurization, which utilizes heat exchangers to recover heat from the outgoing product to preheat the incoming product, improving energy efficiency. The choice of pasteurization method is critical for achieving the desired level of microbial inactivation while preserving the product's quality.
