Oilhardens is a term that describes the process by which certain oils undergo a change in their physical state, typically transitioning from a liquid to a solid or semi-solid form. This transformation is commonly observed with fats and oils derived from both plant and animal sources. The primary mechanism behind this hardening is the saturation of the fatty acid chains within the oil.

Fatty acids are the building blocks of fats and oils. They consist of a chain of carbon atoms with hydrogen atoms attached. When the carbon atoms are linked by single bonds, the fatty acid is considered saturated. Saturated fatty acids tend to pack together more closely, resulting in a higher melting point and a solid or semi-solid state at room temperature. Conversely, unsaturated fatty acids contain one or more double bonds between carbon atoms. These double bonds create kinks in the fatty acid chains, preventing them from packing as tightly and resulting in a lower melting point and a liquid state.

The process of oil hardening can occur naturally, such as with the solidification of coconut oil in cooler temperatures. It can also be induced through industrial processes like hydrogenation, where hydrogen atoms are added to unsaturated fatty acids, increasing their saturation and thus their melting point. This process is widely used in the food industry to create solid fats like margarine and shortening from liquid vegetable oils.
