Livsmedelsfärgämnen, also known as food colorings, are substances added to food and drinks to enhance their appearance, making them more visually appealing. They can be used to replace color lost during processing, to ensure color consistency, or to make food more attractive to consumers. Food colorings are broadly categorized into natural and synthetic types.

Natural food colorings are derived from plant, animal, or mineral sources. Examples include carotenes from carrots, anthocyanins from berries, and curcumin from turmeric. These colorants are often perceived as healthier, though their color intensity can vary and they may be less stable under certain conditions.

Synthetic food colorings, on the other hand, are manufactured through chemical processes. They are often more potent and stable than natural colorings, offering a wider range of vibrant colors and better consistency. Common synthetic colorings include tartrazine (E102) and allura red AC (E129).

The use of food colorings is regulated by food safety authorities worldwide, such as the European Food Safety Authority (EFSA) and the U.S. Food and Drug Administration (FDA). These bodies set standards for which colorings are permitted, their maximum usage levels, and require specific labeling. Regulations aim to ensure that food colorings are safe for consumption and do not pose health risks. Consumer concerns regarding the potential effects of certain synthetic colorings, particularly on children's behavior, have led to ongoing research and debate.
