Littlenecks

Littlenecks are a culinary term used to refer to small, tender clams. Littlenecks are harvested from intertidal zones and shallow waters. Their small size makes them ideal for a variety of preparations, including steaming, baking, or serving raw on the half shell. They are a popular ingredient in dishes like clam chowder, linguine with clam sauce, and steamed clams.

The term "littleneck" refers to their size rather than a distinct species. As clams grow, they are typically categorized by size. For instance, after littlenecks, clams may be referred to as "cherrystones" when they reach a larger size, and then "chowder clams" when they are even larger and best suited for soups and stews. The flavor and texture of littlenecks are generally considered superior to their larger counterparts due to their youth and tenderness.
