Lihovarnictví, often translated as distilling or the spirit industry, refers to the process of producing alcoholic beverages through distillation. This ancient practice involves the separation of ethanol from fermented mixtures, such as grains, fruits, or vegetables, by heating and then cooling the vapor. The resulting spirit is typically more concentrated in alcohol than the original fermented liquid.

The history of lihovarnictví dates back centuries, with evidence suggesting its origins in ancient Mesopotamia and Egypt, though its widespread development is often attributed to medieval alchemists in Europe. Initially, distillation was primarily used for medicinal purposes, with spirits believed to possess healing properties. Over time, its application expanded to the production of beverages, leading to the creation of a vast array of distinct spirits worldwide.

The process generally involves several key stages. First, raw materials are fermented to create a low-alcohol liquid. This fermented mixture is then heated in a still. As the liquid heats up, the alcohol, which has a lower boiling point than water, vaporizes. This vapor rises and is then cooled in a condenser, where it turns back into a liquid form, resulting in a higher concentration of alcohol. This concentrated liquid is the distilled spirit.

Different types of spirits are produced through variations in the raw materials, fermentation processes, distillation methods, and aging techniques. Common examples include whisky, vodka, rum, gin, brandy, and tequila.
