Käsetorten
Käsetorten (singular Käsetorte) are a family of desserts in German-speaking countries characterized by a cheese-based filling, typically made from quark (a fresh curd cheese) or cream cheese, set on a pastry or sponge crust. The fillings are usually sweetened and flavored with vanilla and lemon zest, and may include eggs, sour cream, or whipped cream to achieve a smooth, creamy texture. Many versions are chilled rather than baked; however, some Käsetorten are baked, or partly baked, to set the filling.
The crust can range from a traditional shortcrust pastry (Mürbeteig) or biscuit crust to a light sponge
Regional use in Germany, Austria, and Switzerland reflects a tradition of cheese-based desserts, with development centering
Common variants include layered Käsetorten with fruit layers in between, and Käse-Sahne-Torte that emphasizes whipped cream
