Kupolás

Kupolás is a traditional Hungarian culinary technique involving the slow cooking of food, typically meats or stews, in a lidded earthenware pot, often placed in a hearth or oven. The name "kupolás" derives from the dome-shaped lid, or "kupola," of the pot, which helps to trap steam and create a moist cooking environment. This method allows flavors to meld and intensify over long periods, resulting in tender and succulent dishes.

The process typically involves layering ingredients, such as seasoned meats, vegetables, and liquids, into the earthenware pot. The pot is then sealed, often with a dough seal around the lid to ensure maximum steam retention, and placed in a low, steady heat source.
