Koputamisega

Koputamisega refers to a traditional Estonian practice of collecting maple sap, primarily from the Norway maple (Acer platanoides) and the common sycamore maple (Acer pseudoplatanus). This process typically takes place in the spring, usually during the thaw period when temperatures fluctuate around freezing. The sap collected is then used to produce maple syrup, a valued sweetener and ingredient in Estonian cuisine.

The collection method involves making a small incision or drilling a hole into the trunk of the maple tree. A spile, often a piece of wood or plastic tubing, is inserted into the opening to direct the flow of sap into a container, such as a bucket or a bag. The amount of sap collected depends on various factors including the tree's size and health, weather conditions, and the timing of the collection.

Historically, koputamisega was an important source of sugar and food for Estonian communities. While large-scale commercial maple syrup production is not as prevalent in Estonia as in North America, the practice remains a cherished tradition, often carried out by individuals and families for personal use or as a hobby. The collected sap is boiled down to concentrate its sugars, transforming it into a rich, amber-colored syrup.
