Koolsla

Koolsla is a salad made from finely shredded raw cabbage mixed with a dressing. In Dutch it is called koolsla or koolsalade and is commonly served as a side dish. The basic version uses green or white cabbage; red cabbage is also used, and shredded carrot is a frequent addition.

Dressings vary: the most common is mayonnaise-based, but lighter versions use sour cream or yogurt or a vinaigrette. Typical flavorings include vinegar or lemon juice, sugar, mustard, salt, and pepper. Some recipes add apples, raisins, onions, or fresh herbs. Cabbage may be salted briefly to draw out moisture, then drained before mixing with the dressing.

Preparation is simple: shred the cabbage finely, mix with the dressing and any extras, and chill before serving to let flavors meld.

Etymology and usage: The name koolsla literally means cabbage salad in Dutch. The English term cole slaw is descended from this Dutch name, via early American usage. The dish resembles other coleslaws found around Europe and North America.

In Dutch cuisine, koolsla is a common accompaniment to fried fish, grilled meats, sandwiches, and barbecued dishes. It is also available as a ready-made product in supermarkets and at delis.
