Kojutoomise

Kojutoomise refers to a traditional Japanese practice of preparing and serving *kojito* (小豆飯), a type of red bean rice dish, often associated with the New Year (*Shōgatsu*). The term combines *koji* (小豆), meaning "adzuki beans," and *toomise* (飯盛), which loosely translates to "rice preparation" or "rice dish." This dish holds cultural significance as a symbol of prosperity, good fortune, and the start of a new year in Japanese cuisine.

The preparation of kojutoomise involves cooking adzuki beans until they are soft and sweet, then mixing them with steamed rice, often flavored with sugar, salt, or sometimes a touch of soy sauce. The beans are traditionally boiled in a *mamegata* (豆型), a shallow wooden tray, to ensure even cooking. The dish is typically served warm, sometimes garnished with kinako (roasted soybean flour) or grated ginger for added texture and flavor.

Kojutoomise is often enjoyed during New Year celebrations as part of *osechi-ryōri*, a multi-course meal featuring symbolic foods.
