KC4H5O6 is the chemical formula for potassium bitartrate, commonly known as cream of tartar. It is a byproduct of winemaking and is a white, powdered acidic salt. Potassium bitartrate is formed when tartaric acid, a naturally occurring acid found in grapes, reacts with potassium. During the fermentation process, as sugars in the grape juice are converted to alcohol and carbon dioxide, potassium bitartrate precipitates out of the solution and forms crystals. These crystals are then collected, purified, and processed into the powder.
