Juveelitööstuse refers to the industrial production and processing of rye (*Secale cereale*) in Estonia, particularly focusing on the cultivation, milling, and utilization of rye grain. Rye has been a staple crop in Estonia’s agricultural history, valued for its adaptability to harsh climates and its versatility in food production.

The cultivation of rye in Estonia dates back centuries, with its cultivation peaking during periods of limited arable land and challenging growing conditions. Rye’s hardiness made it a reliable crop in regions with poor soil or cold winters. Over time, juveelitööstuse evolved to include specialized milling techniques to produce rye flour, which is distinct from wheat flour due to its higher fiber content and darker color.
