Gammakaitset refers to the process of exposing materials, particularly food, to gamma radiation for the purpose of preservation, sterilization, or extending shelf life. This method is a form of ionizing radiation, where gamma rays—high-energy electromagnetic waves—are used to disrupt the DNA of microorganisms, insects, or other pests, thereby preventing spoilage or contamination. Gamma rays are typically produced by radioactive isotopes such as cobalt-60 or cesium-137, which emit penetrating radiation that can reach deep into packaged goods.

The technique is widely employed in the food industry to eliminate bacteria, fungi, and parasites that cause spoilage or foodborne illnesses. Common applications include treating spices, grains, dried fruits, and ready-to-eat meals. Unlike traditional methods like pasteurization or chemical preservatives, gamma irradiation does not significantly alter the nutritional or sensory qualities of the treated product.
