Fishstorage refers to the processes and practices used to preserve fish and seafood from harvest through processing and distribution to end users. The aim is to maintain safety, quality, texture, and flavor while minimizing spoilage and waste. Storage practices vary by product form (whole fish, fillets, minced, or processed products) and by supply chain stage (retail, food service, or consumer households).

Temperature control is central to fishstorage. The cold chain keeps products chilled from harvest to sale. Fresh fish are typically kept at 0 to 4°C, often on ice in display cases or refrigerated rooms. Frozen fish are stored at −18°C or below to halt most microbial activity. Rapid chilling after catch and proper segregation of species help preserve quality and reduce odors and histamine formation in susceptible fish.

Common storage methods include chilling, freezing, canning, smoking, curing, and drying. Chilled storage is used for immediate sale and short-term use, with shelf life measured in days. Freezing extends shelf life to months; technologies such as blast freezing and IQF minimize dehydration and texture loss. Canning, smoking, and curing produce shelf-stable products with longer storage times, though processing alters texture and flavor.

Packaging and storage environments influence quality. Vacuum packaging and modified atmosphere packaging slow oxidation and microbial growth. Proper moisture control and protection against freezer burn are important for frozen goods, while clean, sanitized facilities reduce contamination risks. Temperature monitoring and traceability are common in professional supply chains.

Regulatory and safety aspects include adherence to HACCP principles, labeling, and record-keeping for temperature history and source control. Consumer guidance emphasizes proper refrigeration, use-by dates, and safe thawing practices to maintain seafood safety.
