Their metabolic activity is central to the production of various food products and beverages, most notably vinegar.

The classification of acetic acid bacteria is based on their physiological and biochemical characteristics, with genera like Acetobacter, Gluconobacter, and Komagataeibacter being prominent. Acetobacter species are generally found on fruits and flowers and are known for their ability to tolerate high concentrations of acetic acid. Gluconobacter species, on the other hand, are often found on fruits and in sugary saps and are important in the initial oxidation of sugars to organic acids. Komagataeibacter, formerly part of Gluconobacter, is renowned for its ability to produce bacterial cellulose, a pure form of cellulose with applications in various industries.

The primary metabolic pathway of acetic acid bacteria involves the enzyme alcohol dehydrogenase, which converts ethanol to acetaldehyde, followed by aldehyde dehydrogenase, which oxidizes acetaldehyde to acetic acid. This process requires oxygen, as they are obligate aerobes. Beyond vinegar production, their metabolic versatility allows them to produce other organic acids, such as gluconic acid and citric acid, and they play roles in the fermentation of tea and cocoa. While beneficial in many food production contexts, some acetic acid bacteria can cause spoilage in alcoholic beverages by producing off-flavors or excessive acidity.
