Chlebíky

Chlebíky, or obložené chlebíčky, are small open-faced sandwiches that form a staple of Czech and Slovak cuisine. They are made on slices of bread, usually white or dark rye, spread with butter or mayonnaise, and topped with a variety of ingredients such as sliced meats, cheese, hard-boiled egg, pickles, cucumber, olives, and fish. Typically, chlebíky are served cold on a platter as part of a larger assortment called an obložený talíř. They are a common fixture at social gatherings, weddings, banquets, Christmas markets, and other celebrations, where they function as a convenient, shareable hors d’œuvre.

The bread is cut into small oblong pieces, lightly buttered or spread with mayonnaise or a tartar-style sauce, then layered with a combination of savory toppings. Garnishes such as parsley, paprika, dill, or slices of pepper or pickle add color and aroma. Vegetarian versions exist, featuring roasted peppers, marinated vegetables, or cheese with herbs, while traditional combinations often include eggs with cucumber, ham or salami, and fish such as herring or tuna.
