Chinkabashi

Chinkabashi is a traditional Japanese confectionery that originated in the Edo period (1603–1868). The name "chinkabashi" comes from the sound of the wooden mallet (*chinka*) used to pound the ingredients, and the bamboo sieve (*bashi*) employed in the preparation process. This sweet is known for its soft, chewy texture and mild sweetness, often featuring a subtle flavor derived from ingredients like mochi rice, sugar, and sometimes matcha (green tea) or red bean paste.

The confection is typically made by pounding steamed mochi rice flour with sugar into a dough-like consistency, which is then shaped into small, round balls.
