Carbonaris refers to a variety of topics, most commonly associated with a specific type of pasta dish and, less frequently, to a historical group or individuals involved in coal mining or charcoal production.

The most prevalent understanding of "Carbonaris" is in relation to Spaghetti alla Carbonara, a classic Italian pasta dish. This dish typically features eggs, hard cheese (such as Pecorino Romano or Parmesan), cured pork (guanciale or pancetta), and black pepper. The sauce is created by emulsifying the cooked pasta's starch with the egg and cheese mixture, resulting in a creamy, rich coating. Originating from Rome, its exact history is debated, with some theories linking it to charcoal workers (carbonari) who might have prepared a simple, portable meal.

Beyond the culinary context, the term "Carbonari" (plural of carbonaro) historically denoted members of secret revolutionary societies active in Italy during the early 19th century. These groups played a significant role in the Italian unification movement, known as the Risorgimento. Their activities often involved clandestine meetings and plotting against the ruling Bourbon monarchy in the Kingdom of the Two Sicilies. The name itself is derived from the Italian word for charcoal, potentially referencing their supposed origins among charcoal burners or their use of charcoal imagery in their symbolism.

In some specific regional or historical contexts, "carbonari" might also refer more directly to individuals whose livelihood involved working with coal or charcoal, such as miners or charcoal burners. This usage is less common and generally superseded by the more widely recognized culinary and historical meanings.
